Made some relish

We started getting a little overwhelmed by cucumbers, so we decided to make relish today. Here is the recipe, in case you also find yourself struggling with an excess of cucumbers. Of course now I'm going to have to eat a lot of meat for which to put the relish on...oh darn...
;)

Recipe:
- 6 cucumbers (I suggest excluding the seeds)
- 3 medium onions
- 2 red peppers
- chop or run through food processor
- add 1 teaspoon salt sprinkled over top
- let stand overnight
- drain
- add 1-1/2 cups sugar
- 3/4 cup vinegar
- 1 teaspoon mustard seed
- 1 teaspoon celery seed
- simmer until thick
- can/bottle as preserves
